Food For Thought: LOVE

Hello friends,

Love is the thing. It’s The Thing.

We all dream dreamy dreams of being in love, especially us girls.

We play with our Barbies getting dressed up to go out with Ken. We dress like princesses for proms, become bridesmaids and eventually The Bride.

It’s all romantic, it’s all lovey-dovey, fluffy, pink and sweet smelling.

Then reality hits. Dirty socks on the floor, falling asleep on the couch, burping, scratching and conversation becomes, “Hey where’s the remote?”

How quickly the fluffy pink, sweet smelling illusion fades!

But that isn’t love, that’s smoke and mirrors.

Love is tough–it’s holding someone up when you’re not sure you can hold yourself up. It’s biting your tongue and resisting the urge to say I told you so.

It’s rubbing tired feet when you really want your own feet rubbed. It’s listening to a boring story about what’s going on at work when you’d rather be reading funny memes on Facebook.

But the secret sauce to love is thankfulness. Being thankful to have those dirty socks to pick up and those stinky feet to rub.

No matter where you are today–with a partner, without one…all of us have the ability to actively love on someone. And that is a demonstration of thanksgiving, don’t you think?

So today, go love someone up–your spouse, your friends, a family member…or your pet, keeping in mind that you’ve been given the privilege to demonstrate your thankfulness for him or her, isn’t that the coolest?

Go ahead–feel all the feelings…it’s a mighty powerful thing, L – O – V – E. 🙂

And here’s a recipe everyone will love!

Slow Roasted Tomato and Ricotta pasta

2 pints cherry tomatoes
12 ounces ricotta cheese
10 cloves garlic, peeled
1/2 cup chopped basil leaves
3 tablespoons olive oil
1 pound capellini, or use another thin pasta

Place tomatoes and olive oil in a bowl and toss to combine. Place tomatoes in a slow cooker, top with ricotta, garlic and basil. Add salt and pepper. Cook on medium for 4 hours. Cook capellini or any thin pasta according to directions. Serve with grilled chicken breasts, or just with a big salad.

GLUTEN FREE:  Use gluten free pasta.
