Reaching for Comfort Food During Stressful Times

If you have had your television on lately; the breaking news has probably disturbed you. It does not matter which side of the aisle you are from; the news has made us all reach for our comfort food. Do you know which food you reach for when you are anxious?

For me it is pasta; really macaroni and cheese. I can’t have any of it because once I start, I have to eat it all. I am like an addict when it comes to mac and cheese. I am not talking about the blue box kind either. I want the oooy gooy made from scratch kind that starts with a simple white sauce.

A white sauce is just gravy. It can be made very simply with just a few ingredients that I always keep on hand; butter, powdered milk, and plain flour.

Here are some meals you can make with this white sauce.

  1. Sausage gravy: add crumble up cooked sausage to sauce
  2. Cheese sauce: add grated cheese
  3. Alfredo sauce: add a cup of grated Parmesan cheese
  4. Mustard sauce: recipe link below

Here is a basic recipe.

Powdered Milk mix up 2 to 4 cups. I like to make enough to get a good batch of white sauce.

2 to 4 tablespoons of butter in a large sauce pan. I use an iron skillet.

1/2 cup of plain flower.

If you need an exact recipe then go here. I don’t cook that way. LOL

I melt the butter and add the flour and stir it around. Or you can mix a little milk with the flour to make a paste; 1/2 milk to 1/2  flour. Keep stirring the paste till it is smooth and gradually add more milk till you have about two cups. Add the two cups of milk/flour mixture to the melted butter. Cook on medium heat (we should never cook on high) stirring all the time till it gets thick. If it gets too thick add a little more milk to thin to the desired consistency.

At this point you can start doctoring the white sauce for your homemade goodness. Besides adding 2 cups of grated cheese to make Marconi and Cheese you can use the white sauce for my favorite beef roast.

I add Worcestershire or soy sauce to make the gravy brown. You can also add beef bouillon to the white sauce. Your roast will only be as good as your gravy. I like to cut up a couple of onions into small wedges. Then pour gravy over your roast in the slow cooker. Add potatoes and carrots. I am just hungry thinking about a wonderful home cooked beef roast.

Make sure your comfort food is good for you! Don’t binge and most of all when you start to feel anxious do like I do; turn off the television and start cooking something wholesome for your family. If the stress is getting to you; your family is feeling it too. Set the table and spend some time helping your family decompress over a lovely meal.
