Food for Thought - One Pot Cooking

Dear Friends,

I'm of the opinion that one pot cooking is simply the bomb (as my teenaged kids are apt to say). One pot equals minimal mess equals quick and easy dinner. What's not to love about that? And if that one pot happens to be a crockpot, all the better. That means dinner is cooking while you're at work. How great is that? That's like having your own personal cook! And you thought you couldn't afford a "staff" to do your bidding!

The crockpot is mercifully forgiving and will cook things beautifully even when we aren't very accurate in measuring, except when we don't fill it up enoughÑthen you'll burn dinner. You gotta remember that 2/3 to 3/4 full will give you good results. Today's crockpots cook hotter than they did back in olden days (70'sÑwhen a lot of you weren't even born!). They also are a heck of a lot more attractive and functional. My first one was a little 3 quart avocado green number with a couple of hideous brown stripes around the middle. The crock part was stuck in there and cleaning it was a nightmareÑyou had to be careful not to get the electrical outlet part of it from getting wet.

My newest crockpot (gosh, I've been thru a few!) is sleek and sexy. Stainless, black, oval shaped and removable crock. It holds 8 quarts and makes vats of chili in one go. What's not to love about this beauty?

Here's my recipe for Crockcooker White Chili (crockcookers are what we call our crockpots on savingdinner.com) so you can get your one pot cooking going this week!

Crockcooker White Chili
Serves 8

2-4 cups cooked chicken, chopped up (I use as much or as little leftover chicken from Rubber Chicken)
2 onions, chopped
2 1/2 cups chicken broth, canned or homemade
1 7 ounce can green chilies, chopped
1 12-15 ounce can tomatillos (or use 1 1/2 cups green salsa)
2 teaspoon each: cumin and garlic powder
1 teaspoon oregano
3 cups white beans, cooked, canned or make yourself
1/4 bunch cilantro, chopped--optional
1 pound low-fat jack cheese, grated

Throw everything in your crockcooker, except the cilantro and cheese. Cook on high for about 3 hours or so, if you want it to cook all day, put it on lowÑjust make sure your crockcooker is filled upÑif you have a big one, you may need to double the recipe.

Serve in nice big bowls, sprinkle with cilantro if you like, and some grated cheese.

SERVING SUGGESTIONS: A big green salad and some cornbread.
