I wanted to share my favorite meal plan– it starts with cooking a whole chicken in my crockpot. (I always buy one every time they’re on sale and pop them in the freezer.) So the first day of the menu we have slow-cooked chicken, with potatoes “baked” in the microwave. It’s like Sunday dinner on a weeknight! Then I can get at least two meals out of the leftover chicken!
We change up the leftover meals, and make either: chicken stew, quesadillas, sandwiches, pot pie, chicken noodle soup, chicken tacos, chicken & veggie stir-fry. I am sure others could find even more ideas for the leftovers! It’s a great way to stretch food dollars. Now I also make my own chicken broth by boiling down the bones, and stick that in the freezer, too! It’s great to spend so little on one chicken and get so much use out of it!
